Happy St. Nicholas Day
I hope everyone had a nice day. For us, 6th of December is St. Nicholas Day, or beginning of the holiday season. This year, the holiday spirit hasn’t kicked in just yet, partly because of the unusual, warm weather we were having all-through the autumnal months. I’m longing for snow, however it doesn’t look like my wish will come true anytime soon… So, please, dear Santa, bring us some snow!!!

We baked and ate this traditional bread of St. Nicholas yesterday. I used last year’s recipe, with addition of ground spices (cloves, cardamom and cinnamon).

I came across the recipe for these crunchy coconut bites twice within just one day, and given the simplicity of the preparation, plus the urge to use up some remaining corn flakes, I gave them a go this morning: I think they were ready within no more than 20 minutes! Unfortunately, my oven is not very “meringue-making-friendly” as the egg whites tend to turn dark too easily, so these bites didn’t look as pretty as they should. Nonetheless, they were quite tasty.

CRUNCHY COCONUT BITES
(for about 15 bites)
40gr grated coconut
30gr corn flakes
3 Tbsp blond cane sugar
a pinch of salt
1 large egg white
1. In a bowl, combine coconut and corn flakes.
2. In another bowl, beat the egg white together with salt using a hand mixer. Add the sugar (a tablespoon at a time), then mix in the coconut and corn flakes.
3. With a help of two teaspoons, drop the coconut mix to the baking sheet, lined with a baking/parchment paper, leaving 3-4cm space between the bites. Bake them for approx. 15 minutes at 170ºC – if I was to make them again, I’d lower the temperature to 120ºC or so because 170 was far too hot. My bites turned brown withing less than 10 minutes.
4. Remove from the oven and let cool on a kitchen rack – or eat while still warm.
