Let it rain!

This dry weather is driving us crazy. I’ve been expecting this week for some blessing to fall from the sky, but so far nothing… just clouds and wind. I don’t really know what they’re doing up there, but they better decide and send some water soon. I got shocked the other day when I visited my hometown: the soil in the garden was completely dried out and I could see cracks all around. Almost like those in the Atacama desert. This is not the Slovenian winter I used to know.

Moreover, it’s February the 29th, a day that deserves a little post at least, given that there won’t be such a date for the next 4 years, and so here I am – with another recipe, quite simple but at the same time very nutritious. I made it today for lunch and it made my day with its vibrant colours and refreshing taste. Let’s call it:

A MEDITERRANEAN-STYLE SALAD

You can be creative and change or replace the following ingredients if you wish:

- red bell pepper, sliced
- green bell pepper, sliced
- cucumber, sliced
- chickpeas, cooked
- corn, cooked
- green beans, cooked
- lettuce, trimmed
- radicchio, trimmed
- tuna
- olives

Dressing (combine and shake well):
- olive oil, apple vinegar, lemon juice, balsamic vinegar, unrefined sea salt, mustard.

Assemble and enjoy with a slice of home made bread or toast.
