Coping with heat
Slovenia has been hit by a heat wave, as well as the neighbouring central European countries and, for those not fond of high temperatures, these days are going to be quite difficult to cope with. I actually envy a bit those of you who managed to escape from town and are now in the sea or somewhere in the mountains. But OK: I invented a way to chill out here at home in Ljubljana, too, now that it’s empty. With my summer milkshake life can get better, even if only for some moments. Here is the recipe:

With a dash of cinnamon powder it tastes even better!
- 1l of milk, either skim or whole
- 300ml soya whipping cream
- sugar to taste
- 1 vanilla bean, cut lenghtwise
Boil the milk with the vanilla bean, cover and let it cool completely. The best is to let it cool overnight. Discard the vanilla.
Whip the soya cream with sugar, then whisk it into the milk gently.

Put it in the freezer for a few hours or until it gets cool to your preference. You can also freeze it and eat later as an ice cream. To unfreeze it for milk shake, take it out of freezer an hour or so before using.
