Opening season for green beans

Being a great fan of all different types of vegetables you can imagine, I can’t wait every spring for green beans to come into the market. Unfortunately, those we planted in our home garden won’t be available till August/September, which is far too long to wait for, so I buy them at the local marketplace.
I don’t have to think much what to do with them, hence both Juanpi and I truly love them in a traditional Slovene dish which has a simple name: green beans with potatoes. He actually didn’t know them in this combination before, while we have been eating them this way for ages in my family, and ever since preparing them for the first time, he doesn’t stop encouraging me to cook them over and over again.

Depending on the region, I’m sure there exists a nice number of preparation varieties, but honestly, I’ve never been interested too much in trying another one because the one I’m presenting you here today is absolutely yummy according to our opinion. Let’s see which are the ingredients:

GREEN BEANS AND POTATOES

300g of spring green beans
300g of potatoes
salt
2 Tbsp of butter/olive oil
1Tbsp of bread crumbs
50ml of heavy cream/milk

1. Remove the stems of the green beans, clean and wash them. Boil them in salty water until they’re soft but still a bit crunchy. Drain and set aside.
2. Peel the potatoes and cook them in salty water. Drain and mix them with beans in a big bowl.
3. Melt the butter and fry the bread crumbs until they get a nice brown color. Pour over the bean-potato preparation.
4. For a richer taste, add some heavy cream or milk and stir well.
5. Serve warm as a main dish. Reducing the quantities, it can be served as an appetizer as well.
