Sweet Sunday Spoiling
Do you ever find yourself dying for something sweet on a Sunday afternoon? ![]()
It happens to me everytime, and the more I try to fight the idea, the bigger my craving becomes! Simply, me entran ganas de comer algo dulce, as I learned to say it in Spanish (“I get the wish to eat something sweet”).
So, resisting to this feeling doesn’t pay off. And as always, I first took a look inside the fridge to check the ingredients I had available. Hmm, not too many choices, actually… There were eggs and milk and oh – some cottage cheese! So I knew in a moment what I was going to prepare.
Gratinated pancakes with cottage cheese filling
I’m not really obsessed with pancakes as you might think , but let’s be honest: pancake batter offers a nice variety of tasty desserts! -And not only, as I like to eat Frittaten in soup as well-. And if you ask me, cottage cheese is one of the things that were just meant to fill pancakes with.
It fits terribly well, specially if you add flavour to it using some vanilla extract and a bit of rum. The preparation is more than simple, so let’s see what you need:
For making the batter:
- 2 eggs
- a pinch of salt
- 4 tablespoons of sugar
- 200ml of whole milk
- 150g of all-purpose flour
- some butter for baking

For the filling:
- 250g cottage cheese
- 2 tablespoons of sugar
- a few drops of vanilla extract
- 2 tablespoons of whole milk
- 1 whole egg
- 1 tablespoon of rum (I suggest Caribbean one)


Beat the eggs with sugar and a pinch of salt. Add the milk and flour progressively and mix until you obtain a smooth batter.
Heat some butter in a pan (20cm) and bake 7 pancakes. Make the filling: mix well the cottage cheese with sugar, vanilla extract and milk, then incorporate the egg and rum.
Grease the baking tin and preheat the oven to 180°C.
Spread some filling onto each pancake, roll it and place in the baking tin. The filling left-over can be spread on top of the rolled pancakes.
Heat some butter in a pan (20cm) and bake 7 pancakes. Make the filling: mix well the cottage cheese with sugar, vanilla extract and milk, then incorporate the egg and rum.
Grease the baking tin and preheat the oven to 180°C.

Now place the baking tin into the oven. Increase the temperature to 200°C after 15 minutes and continue baking for additional 15 minutes or so. The gratin must have a nice golden colour. Then take the baking tin out of the oven and let cool for some minutes.
Cut in slices and serve lukewarm. If desired, sprinkle with some confectioner’s sugar.
