Kaiserschmarrn with poached apples, sultanas and walnuts
I always loved to prepare carski praženec (that’s how we call it in Slovene) and with time I slightly modified the original recipe to my liking. It was on for today’s dessert and I decorated it with roast apples and sultanas, scattered with sliced up nuts. Almost forgot about them untill seeing them in the little wooden bowl in the kitchen cupboard where I have been keeping them since last November. I like to go picking nuts in the woods but I usually arrive too late when the squirrels had taken them up already. Hmmm, too bad for me and too good for them!
Rendering back to what I was saying, I suddenly noticed them and said to myself: “Why not to combine them with praženec today?” No sooner said than done!


3 eggs
a pinch of salt
5 tsp of vanilla scented sugar
1 cup of all-purpose flour
16 tbsp of milk
butter for baking
For the decoration:
2 apples, finelly sliced up
a bit of water
1 tsp of sugar
juice of 1/2 of lemon
1 tbsp of sultanas
1 tsp of rum
3 nuts, cracked and chopped
Steps:
1. Beat the eggs with salt and sugar, add the flour and milk to obtain a dense batter.
2. Apply a small quantity of butter and bake pancakes of 0.5 – 1cm thick. Before removing it from the frying pan cut it up into small pieces using 2 forks and place the Kaiserschmarrn into a bowl. Keep it warm untill the rest of pancakes have been split and added.
3. Pour rum over the sultanas and stir.
4. Bring to boil the sliced up apples with a bit of water. Add sugar, sultanas and simmer untill softened. Finally, sprinkle with lemon juice, stir and serve together with Kaiserschmarrn.
