Kaiserschmarrn with poached apples, sultanas and walnuts
Kaiserschmarrn (Kaiser = Emperor’s, Schmarrn = “mishmash“, a kind of omelette) got its name after the famous Austrian emperor Franz Josef and is one of the most known Austrian desserts, being very popular in Slovenia, too. It’s made with eggs, flour, milk, salt and sugar, and then baked as pancake, split into pieces while frying and served with a sprinkle of sugar. Of course, this is only one of several ways of preparing it.
Usually they accompany it with a compote.
I always loved to prepare carski praženec (that’s how we call it in Slovene) and with time I slightly modified the original recipe to my liking. It was on for today’s dessert and I decorated it with roast apples and sultanas, scattered with sliced up nuts. Almost forgot about them untill seeing them in the little wooden bowl in the kitchen cupboard where I have been keeping them since last November. I like to go picking nuts in the woods but I usually arrive too late when the squirrels had taken them up already. Hmmm, too bad for me and too good for them!
Rendering back to what I was saying, I suddenly noticed them and said to myself: “Why not to combine them with praženec today?” No sooner said than done!

And here are the ingredients I used (suits 2 hungry people ):
For the batter:
3 eggs
a pinch of salt
5 tsp of vanilla scented sugar
1 cup of all-purpose flour
16 tbsp of milk
butter for baking
For the decoration:
2 apples, finelly sliced up
a bit of water
1 tsp of sugar
juice of 1/2 of lemon
1 tbsp of sultanas
1 tsp of rum
3 nuts, cracked and chopped
3 eggs
a pinch of salt
5 tsp of vanilla scented sugar
1 cup of all-purpose flour
16 tbsp of milk
butter for baking
For the decoration:
2 apples, finelly sliced up
a bit of water
1 tsp of sugar
juice of 1/2 of lemon
1 tbsp of sultanas
1 tsp of rum
3 nuts, cracked and chopped
Steps:
1. Beat the eggs with salt and sugar, add the flour and milk to obtain a dense batter.
2. Apply a small quantity of butter and bake pancakes of 0.5 – 1cm thick. Before removing it from the frying pan cut it up into small pieces using 2 forks and place the Kaiserschmarrn into a bowl. Keep it warm untill the rest of pancakes have been split and added.
3. Pour rum over the sultanas and stir.
4. Bring to boil the sliced up apples with a bit of water. Add sugar, sultanas and simmer untill softened. Finally, sprinkle with lemon juice, stir and serve together with Kaiserschmarrn.
Note: As the pancakes can be pretty heavy for the stomach, I sprinkle them with some lemon juice. Don’t hesitate to do so if you are a lemon fan like me!
