Seabream with potatoes
Fish dishes are a healthy and tasty choice, and despite the high price of fish in Slovenia, I include them in the menu from time to time.
When I prepared seabream for the first time I combined it with the following ingredients:
When I prepared seabream for the first time I combined it with the following ingredients:
For 3 persons:
3 seabreams
8 potatoes
2 lemons
3 tomatoes
salt
nutmeg
rosemary
olive oil
1 glass of dry white wine
Squeeze some lemon on top of the -already clean- fish, spice with nutmeg and rosemary and salt it.
Make 2 or 3 cuts into the side of fish and put inside the cuts some slices of lemon.
Peel the potatoes, cutting them into thin slices and salt them.
Cut the tomatoes too, and preheat the oven to 180°C. Spread some olive oil over a big baking tray, place the potatoes on the bottom and brimfish on top of the potatoes. Decorate with tomato slices and spice the whole dish with extra rosemay for an intense aroma.
Place the baking tray inside the oven. Pour some wine over the fish every now and then, turning over the fish gently and stiring the potatoes as well.
After 45 minutes, increase the temperature of the oven to 220°C and let the fish roast for another 20 to 30 minutes.
When our dish is ready, take the tray from the oven and enjoy your highly nutritive meal.
